Blended Bourbon

Our Blended Bourbon is a whiskey for nearly every occasion. While many blended whiskeys dilute straight whiskeys with neutral spirits, ours are always blended from mature bourbon, rye, malt, and corn whiskeys made in house, with the details of each blend posted on our website. A lighter profile somewhere between well-made bourbon and Irish whiskey with lots of vanilla, caramel, and toffee for a rich and versatile whiskey. What makes this whiskey stand out is its buttery viscosity, thick with oils and esters that only small-scale pot stills can deliver. - $12 pour, $7 half pour

Straight Bourbon

Kings County Distillery Straight Bourbon is a bourbon made like a scotch whiskey. We use 80% New York organic corn and 20% English Golden Promise barley for a high-malt recipe that forgoes the wheat or rye typical of Kentucky bourbons. This mash is then double pot distilled for a rich and flavorful white spirit. After aging in a variety of new charred oak barrels for anywhere between 4 and 6 years, our bourbon is carefully blended to ensure quality and complexity. With prominent notes of caramel and vanilla, as well as undertones of dark berries, this bottle is cited frequently in lists of best craft bourbons. - $16 full pour, $12 half pour

Peated Bourbon

This whiskey conforms to the American requirements for bourbon but is made with Scottish malted barley that has been exposed to peat smoke, a practice common in scotch whiskies. So it’s a hybrid whiskey of the two traditions: the high-corn mashbill and new-barrel aging produce a spirit that is unmistakably bourbon, while complementary notes of barbecue and campfire smoke linger long after the sip. If scotch and bourbon had a baby, this double gold medal winner is what it would taste like. Although the word peat is in the name, this is more bourbon than scotch: with rich, classic caramel and baking spice on the nose and palate and just a wisp of scotch whiskey's signature complexity on the finish. - $16 pour, $12 half pour

American Single Malt

For the first time since 1972, the Federal government has recognized a new style of whiskey, largely due to an effort led by smaller craft distillers. Our version of the new American Single Malt conforms to all the requirements for single malt scotch—except that instead of being made in Scotland, it’s made here in Brooklyn. Kings County Distillery’s single malt whiskey is mashed from malted barley (with a hint of peat) sourced from England and Scotland. The whiskey is distilled in traditional Scottish pot stills, then aged in our own used bourbon barrels. Aged between 3 and 6 years, this batch compares to lighter highland malts and Japanese whiskeys, with a broadly recognizable profile of tropical fruits, toasted oak, honey, and vanilla, and sweet smoke offering a testament to the variety and expansive ambitions of the category. - $16 pour, $12 half pour

Straight Empire Rye

Our Straight Empire Rye is made with 80% Danko rye grown in Ancramdale, New York and 20% English malted barley. It’s double pot distilled and aged in charred oak barrels for a minimum of three years. It is one of the few commercially available rye whiskeys made grain-to-glass in the Northeast, where rye first originated in this country. With no corn in this mashbill, this high-rye recipe offers notes of honeycomb, orange zest, and cinnamon on the nose while toffee brittle, dried apricot, and barrel spice overtake the palate, and a lingering finish of maple, anisette, and marzipan. - $16 pour, $12 half pour

Coffee Whiskey

The lively, tropical top notes and creamy, chocolate undertones of Parlor’s Cold Brew — made from a blend of uncompromisingly sourced coffees and roasted in Brooklyn — marry perfectly with the balanced sweetness and rich complexity of our own blend of house-made bourbon and corn whiskey. The resulting drinking experience is that of a true whiskey, but with an added depth of flavor that evokes the elegance of fine Madeira wines and Italian amari. 14mg of caffeine per 1.5oz serving. - $12 pour, $7 half pour

Grapefruit-Jalapeno Moonshine

An infusion of white whiskey and grapefruit & jalapeno. A flavored whiskey made from an unusual combination of flavors for a winning, warm-weather flavored whiskey that works in summery drinks. We start by infusing our corn whiskey with dried grapefruit peel and jalapeño. Whiskey is not usually thought of as much in the summer, but, with the right flavors, can be just as quenching as tequila (and this whiskey is a great substitute for tequila in cocktails). Not quite as spicy as its name suggests, this whiskey really foregrounds the flavors of both ingredients, with bitter and crisp notes of grapefruit and a peppery sweetness of jalapeños that are often masked with heat. - $10 pour, $6 half pour

Spiced Whiskey

Our spiced whiskey is like a spiced rum, but with whiskey. We start with our moonshine base infused with cinnamon, cardamom, vanilla bean, allspice, black peppercorns, clove, and star anise. Full of winter spices, this is a great addition to cider, toddies, and egg nog. Cinnamon and clove lead the palate but a symphony of winter flavors and a touch of sweetness from the whiskey—these are rich spices more common to well-crafted tiki drinks than commercial spiced rum. - $10 pour, $6 half pour

Moonshine

Moonshine most often refers to illegally made spirit, but is also a term of art for distillate intended to be consumed neat, a concept familiar in other cultures, but often looked down on in whiskey. In the United States, corn whiskey is a legal class of whiskey that must be at least 80% corn and can be unaged, a nod to our tradition of moonshining. Our moonshine is a corn whiskey made from 80% New York State organic corn and 20% malted barley. Moonshine reflects the skill and ambition of the distiller. Bright with a sweet corn heft & subtle fruit/grassy notes that evoke a well-made silver tequila or a refined mezcal, this is our take on a classic American whiskey. - $10 pour, $6 half pour

Distiller's Proof Moonshine

At 140 proof, this is a potent spirit that is designed for further intervention by the user, as an infusion, a tincture, or as something to be aged. This is the measurement that we collect our spirit after distillation before proofing down to 116 (for our Straight Bourbon) and filling a new charred oak barrel. Bright and grassy, this is corn whiskey at its most potent. Buttered sweet corn on the nose and palate, with corn husk, fermented cereal, and a hint of sugar, with a potent, sharp, and viscous finish. The antecedent to our well-loved bourbon, this is the most sippable distillate we know. - $12 pour, $7 half pour

Barrel Strength Empire Rye (when available)

Our highly sought-after Barrel Strength Rye whiskey is our high proof entry into a rye whiskey category derived from New York’s whiskey heritage. Ours is made from 80% New York-grown Danko rye and 20% English barley malt and is aged at least 4 years in charred oak barrels. With multiple superlative awards and warm commentary from traditional whiskey critics, this whiskey appears once a year and goes fast. It’s no surprise that this whiskey was named best rye whiskey at the 2023 Tales of the Cocktail and won a double-gold (and a superlative 99 points) at San Francisco World Spirits Competition in 2026. - $22 pour, $16 half pour

Barrel Strength Bourbon (when available)

Consistently one of our most coveted bottles and the most widely talked about in bourbon affinity circles is our Barrel Strength Bourbon. Aged between five and ten years, our barrel strength bourbon illustrates how well-made, pot still whiskey shows its strength at higher proof. Often more potent than barrel strength bourbons from other brands, our barrel strength bourbon is one of our most awarded offerings and is often highly collectable batch to batch. Enthusiasts often prefer whiskey undiluted from the barrel, as it offers a more intense concentration of flavor. Bold and rich, this is our most consistently acclaimed limited-release offering, with Best of Category awards from ACSA, Double Platinum from San Francisco World Spirits Competition, and Best Craft Whiskey from the New Orleans Spirits Competition. Appearing only once or twice in limited runs each year, this bottle is truly the superlative Kings County addition to any collection. - $34 pour, $24 half pour

Barrel Strength Peated Bourbon (when available)

This is our first (and maybe not especially frequent) introduction of a barrel strength version of our peated bourbon. It's also the oldest batched release, with a blend of barrels 5-8 years old. With stocks aged as much as a decade of this mashbill, we have a long view of this recipe's potential.

Peated Bourbon presents a dance between oak and smoke throughout its maturation. Over time, the oak has a diminishing effect on the smoke's intensity and heft, morphing the peat presence into a lighter, earthier profile as compared to our existing release at 90-proof, which has more prominent BBQ sweetness. If peated bourbon was once a novelty, this bottle argues for its place in the canon of American whiskey. - $28 pour, $20 half pour

Bottled-in-Bond Empire Rye (when available)

This 7-year single-barrel Bottled-in-Bond Empire Rye is the oldest rye we've ever released. Like all of our black label releases, it represents the most rarified 1% of our inventory, and as a bonded Empire rye, it is highly constrained in its production, which must meet the strict standards for Bottled-in-Bond and Empire Rye to earn both marks. Rich and bold for its 100 proof, this is truly the pinnacle of rye production returned to its ancestral home in the Northeast.

A nose of antique oak, Medjoll date, and green peppercorn (nose opens up with longer oxygen exposure). Juicy, blackberry jam, and pomegranate seed on the palate with a white pepper tingle and Merlot tannin on the finish. - $34 pour, $24 half pour
